Tomatoes and Apples

Whether you are a southerner or not, fried green tomatoes is a treat you need to taste. This recipe is from Elise of Simply Recipes.
3 medium, firm green tomatoes

1/2 cup all-purpose flour
1/4 cup milk
2 beaten eggs
2/3 cup fine dry bread crumbs or cornmeal
1/4 cup olive oil
1/2 teaspoon salt 1/4 teaspoon pepper
Simple ingredients and simply delicious. Serve with all meats.
If you are baking this weekend, here is a suggestion for getting a pie crust to come out just right. Ximena Maier of Lobster Squad put this out as follows:
1- Blind baking. You know, all that thing about the pie weights, and the beans, or the chain, or the marbles? The thing to do here is to take some loosely scrunched tin foil, and lay it inside, making sure it presses against the sides. It´s more than enough to keep the pie walls from caving.
2- Soggy crust. No more. As soon as you have done the step two, taking the foil out, letting the shell become golden, you inmediately give it a quick brush with egg white. The heat from the pastry will insure that the shell cooks inmediately, sealing it and effectively making it waterproof.
Never thought of the egg wash and it worked for me. Made a delicious apple pie(they are in season now) with a beautiful shell.
Get yourself some beautiful apples and tomatoes and you got the start of a fine meal for the weekend.
